13 - Juice of 1 lime

→ To Serve

14 - 12 small corn or flour tortillas
15 - Optional toppings: shredded lettuce, chopped tomatoes, diced red onion, avocado, shredded cheese, sour cream, fresh cilantro, lime wedges

# Directions:

01 - Arrange the chicken breasts or thighs evenly in the bottom of the slow cooker.
02 - Scatter the diced onion, minced garlic, and minced jalapeños (if using) over the chicken, followed by the canned diced tomatoes with their juices.
03 - Sprinkle chili powder, cumin, smoked paprika, oregano, salt, and black pepper evenly across the contents.
04 - Pour the chicken broth into the slow cooker.
05 - Cover and cook on low heat for 6 hours, or on high for 3 hours, until the chicken becomes very tender and shreds effortlessly.
06 - Transfer the chicken to a plate, shred with two forks, then return it to the slow cooker. Pour in the lime juice and mix well to incorporate with the sauce.
07 - Heat the tortillas according to package directions until soft and pliable.
08 - Fill each tortilla with the shredded chicken mixture. Garnish with your preferred toppings and serve with lime wedges.

# Expert Advice:

01 -
  • The slow cooker takes care of dinner while you do anything else—even if that's just catching up on your favorite show.
  • Each bite bursts with flavor without needing a stove or a cluttered kitchen, making this a go-to for easy gatherings or solo nights in.
02 -
  • If you skip the step of returning the shredded chicken to the sauce, it’ll taste dry — learned that lesson when I got distracted once.
  • Lime juice goes in last; if you add it early, it loses its brightness and the flavor fades into the background.
03 -
  • Rub the chicken in the spices before adding the liquids for an even deeper flavor infusion.
  • Set out toppings in colorful bowls and watch even picky eaters get excited for taco night.
