01 - In a medium bowl or jar, combine rolled oats, almond milk, chia seeds, maple syrup, poppy seeds, vanilla extract, lemon zest, lemon juice, and sea salt. Stir thoroughly until all ingredients are fully incorporated and the mixture is uniform.
02 - Cover the bowl or jar securely and refrigerate for a minimum of 6-8 hours, preferably overnight. This allows the oats to soften and the chia seeds to expand, creating a thick, creamy consistency.
03 - Remove from refrigeration and stir again. If the mixture has thickened beyond your preference, add a small splash of plant milk to reach desired consistency. Divide evenly between two bowls or jars. Top with coconut yogurt, fresh berries, sliced almonds, or additional lemon zest as desired. Serve chilled.
