Vegan Lemon Poppy Overnight Oats (Printer-friendly)

Creamy, tangy overnight oats infused with fresh lemon and crunchy poppy seeds—a refreshing, plant-based breakfast that's easy to prepare ahead.

# What You'll Need:

→ Oats Base

01 - 1 cup rolled oats, gluten-free if desired
02 - 1 1/4 cups unsweetened almond milk or other plant milk
03 - 2 tbsp chia seeds
04 - 2 tbsp maple syrup
05 - 1 tbsp poppy seeds
06 - 1 tsp pure vanilla extract
07 - Zest of 1 large lemon
08 - 2 tbsp freshly squeezed lemon juice
09 - Pinch of sea salt

→ Optional Toppings

10 - Coconut yogurt
11 - Fresh berries
12 - Sliced almonds
13 - Extra lemon zest

# Directions:

01 - In a medium bowl or jar, combine rolled oats, almond milk, chia seeds, maple syrup, poppy seeds, vanilla extract, lemon zest, lemon juice, and sea salt. Stir thoroughly until all ingredients are fully incorporated and the mixture is uniform.
02 - Cover the bowl or jar securely and refrigerate for a minimum of 6-8 hours, preferably overnight. This allows the oats to soften and the chia seeds to expand, creating a thick, creamy consistency.
03 - Remove from refrigeration and stir again. If the mixture has thickened beyond your preference, add a small splash of plant milk to reach desired consistency. Divide evenly between two bowls or jars. Top with coconut yogurt, fresh berries, sliced almonds, or additional lemon zest as desired. Serve chilled.

# Expert Advice:

01 -
  • The chia seeds plump up overnight creating this incredible pudding like texture that feels indulgent despite being wholesomely simple
  • Lemon in the morning just hits different, cutting through richness and waking up your palate before coffee even touches your lips
02 -
  • The first time I made these I forgot to add enough liquid and woke up to cement thick oats that needed serious rescuing with extra milk
  • Chia seeds need stirring immediately or they clump together in these weird gelatinous blobs that never quite incorporate into the oats properly
03 -
  • Zest your lemon before juing it, trying to zest a squeezed lemon is frustrating and ineffective
  • Use a wide mouth jar for easier stirring and access in the morning
