Beef Sliders Cheese Pickles (Printer-friendly)

Mini beef patties with melted cheese and crisp pickles, ideal for parties or quick meals.

# What You'll Need:

→ Beef Patties

01 - 1.1 lbs ground beef (80/20 blend)
02 - 1 tsp kosher salt
03 - 1/2 tsp freshly ground black pepper
04 - 1/2 tsp garlic powder

→ Cheese & Toppings

05 - 8 slices cheddar or American cheese
06 - 16 dill pickle slices
07 - 8 slider buns
08 - 1/2 small red onion, thinly sliced
09 - 8 small lettuce leaves

→ Condiments

10 - 2 tbsp mayonnaise
11 - 2 tbsp yellow mustard
12 - 2 tbsp ketchup

# Directions:

01 - Heat a grill pan or skillet over medium-high heat until hot.
02 - Combine ground beef with salt, pepper, and garlic powder in a bowl. Gently mix and divide into 8 equal portions. Shape into patties slightly wider than the buns to account for shrinkage.
03 - Place patties on the hot cooking surface. Cook for 2-3 minutes per side until browned and reached desired doneness.
04 - During the final minute of cooking, place a cheese slice on each patty. Cover the pan to melt the cheese completely.
05 - Lightly toast slider buns cut-side down on the grill or in a toaster until golden.
06 - Spread mayonnaise, mustard, and ketchup on bun bottoms. Add cheese-topped patties, 2 pickle slices each, and optional onion and lettuce. Crown with bun tops and serve immediately.

# Expert Advice:

01 -
  • These sliders come together in just 30 minutes but taste like they came from a burger joint
  • The 80/20 beef blend creates that perfect juicy texture without being greasy
  • Everything gets assembled on one pan so cleanup is surprisingly minimal
02 -
  • The patties will shrink as they cook so always shape them a bit larger than your buns
  • Avoid pressing down on the patties with your spatula or you will lose all those precious juices
  • Cheese melts best when you tent the pan with foil or use a lid for just 60 seconds
03 -
  • Make a small indentation in the center of each raw patty to prevent them from puffing up into balls while cooking
  • Let the cooked patties rest for just 2 minutes before assembling so the juices redistribute
